Cabidela de Coelho

1 rabbit cut into small pieces
4 cloves garlic
1 onion
50 ml olive oil
250 ml white wine
1 ripe tomato or 1 tablespoon of pulp
1 teaspoon of paprika
1 bay leaf
1 bunch of parsley
Bunny blood add a little vinegar Salt, pepper, piri piri q.b.

Make a marinade with the rabbit, chopped garlic, white wine, paprika, piri piri, pepper, bay leaf and parsley, let taste take for at least 1 hour. Saute with olive oil and chopped onion, when the onion begins to gain color, stir the rabbit from time to time until it begins to brown. Add the tomato and marinade and cook over low heat until the sauce is reduced. Add the rice and water. When the rice is almost cooked add the blood in a wire stirring constantly (q.b.), bring to the boil, stir the seasoning and serve. The rice should be sour.

Skewered Grilled Rabbit

Recipe for 4 people

ingredients:
800gr rabbit meat (preferably thighs or loins that are easier to debone )
1 small red bell pepper
12 mushrooms
Paus Skewer

For the marinade :
4 cloves garlic
2 bay leaves
50 ml of white wine
salt
chili
piri piri
Parsley
2 oil tablespoons

Cut the meat into cubes and pepper and mushrooms in half.
Mount the expected alternating the ingredients and place them in a tray.
For the marinade chop fine garlic and parsley , add salt, pepper and piri piri to taste. Finally add the olive oil. Stir well and pour this sauce with kebabs . Leave to marinate for 2 to 3 hours turning them from time to time .
Take the skewers grilling a hot grill . It takes only 10 to 15 minutes to get ready.
Serve with a follow-up to taste.

Grill Ribs with Mushrooms

  • 1 packet of rabbit grill ribs
  • 2 medium onions
  • 4 cloves of garlic
  • 1 cup port wine
  • 100 ml of white wine
  • 1 beef bouillon cube
  • 1 teaspoon of thyme
  • 2 tablespoons olive oil
  • 2 tablespoons lard
  • 1 tablespoon flour
  • 150 grams of mushrooms, preferably fresh
  • 1 teaspoon black pepper
  • salt

Spice the rabbit with salt, pepper and thyme.
Browning up the rabbit in mixture of olive oil and lard. Once browned, add the onion and minced garlic. Let it simmer a bit and added the white wine in which broke the flour and bouillon cube and allow to cook. Salteiam to the mushrooms in a little butter to which it joins the port wine. It adds to the rabbit, allowed to establish and serve with accompanying taste.

Rabbit Legs in the Oven

  • 1 packet of rabbit thighs cut into pieces
  • 4 tablespoons lard or butter
  • 4 tablespoons mustard
  • 100 ml of white wine
  • 4 cloves of garlic
  • 1 onion
  • 1 bay leaf
  • 1 teaspoon of thyme
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • Salt, chilli

Cut the onion into slices and place in bottom of a baking sheet, then the rabbit pieces, already seasoned with salt, pepper, thyme, chilli and paprika. Join the minced garlic and bay leaf, slash to the rabbit with lard or butter and then with the mustard. Drizzle with white wine. Go to bake in moderate oven, turning occasionally to prevent burning. Accompany with rice and salad.

BBQ Rabbit

  • 1 packet of grill ribs
  • 2 tablespoons lard or olive oil
  • 200 ml of white wine
  • 2 tablespoons vinegar
  • 4 cloves of garlic
  • 1 cup port wine
  • 1 bay leaf
  • 1 bunch of parsley
  • 1 teaspoon paprika
  • Salt, chilli

Spice the rabbit with the minced garlic, bay leaf, white wine, vinegar, salt, chilli, parsley, paprika and port wine.
Allow to marinate for 3 hours, and again turning. Rabbit runs up and takes to the grid.
Will be basting with the marinade which was added to the lard or oil. When ready, cut into small pieces and you can sprinkle with the remaining sauce after boiling. Serve with chips and salad.
